I am sorry about once RTT is turned on in a meeting, it stays on for the rest of the meeting and cannot be turned off unless everyone leaves and rejoins.
However, the Global Admin can manage RTT availability before meetings or calls start:
1.Create a Microsoft 365 Group and Assign You as Owner
-Log in to the Microsoft 365 admin center.
-Go to Teams & groups > Active teams & groups.
-Click Add a group, then select Microsoft 365 group.
-Enter a group name and description, and choose Private or Public as needed.
-In the Owners section, add yourself as the group owner.
-Click Create to finalize.
2. Disable RTT for Your Group
-Open the Microsoft Teams admin center.
-Navigate to Meetings > Meeting policies.
-Select an existing policy or click Add to create a new one.
-In the Recording and transcription section, set Real-time text to Off.
-Click Save.
-Assign the policy to your group or users via Manage users or Group policy assignment.

3. Manage Calls as Group Owner
-As the group owner, invite members to your team or specific calls via the Teams app.
-With RTT disabled by the IT admin in the assigned policy, it will not be available during your calls.
Note:
-Most steps require Global admin access. You will need to collaborate with your admin to complete these actions.

And a lot of the features are developed and improved based on customer feedback.
