I have yet to see that option displayed anywhere in my own Windows Update screen, which is the location the documentation states is where this optional ESU for Windows 10 will eventually be found.
Since Microsoft clearly prefers that people upgrade to Windows 11, if possible, doesn't wish to need to provide return credit or waste time on similar issues, and has always stated that the USU option would become available at some point around the time of the official end-of-life date in mid-October 2025, we still haven't really passed that point yet.
In fact, since the information I've seen indicates the ESU option will appear after the installation of some particular Windows Update, and since the final set of updates included as part of the original Windows 10 installation will be the second [black] Tuesday of October, I personally suspect that's when the ESU option will actually appear.
Since there's no instantaneous effect of any sort when the support for free updates ends in October, and it would typically be at least the next set of monthly updates in November before the optional ESU would have any real effect, I don't see what you're so worried about, since the documentation also states that the ESU option can be purchased or otherwise enabled via the other advertised methods anytime during the year up through an including its end of support a year later in October 2026.
In fact, that delay and some related investigation allowed me to realize that I've actually, unintentionally acquired a total of over 1000 Microsoft Rewards points, which since that's another optional method of 'payment' for the ESU option,, means I won't have to pay anything at all for it to be used on the up to 10 Windows 10 devices the ESU option supports.
