Thank you for posting your question in the Microsoft Q&A forum.
Based on my research, the 500 error typically happens when a bot deployed in Azure isn’t configured for all required channels. For Copilot in Teams, the bot must also be enabled for the Microsoft 365 channel in addition to the others. We’ve also seen a few other users reporting similar behavior recently, and the product team has acknowledged this as an issue currently under investigation.
In the meantime, I’d suggest reviewing this article and checking whether enabling the Microsoft 365 channel helps in your tenant: Extend Message Extension to Outlook - Teams | Microsoft Learn
If the issue persists after that, I recommend raising a support ticket with the Azure Support team. As far as I know, this error seems to be related to Azure configuration, and they have the necessary tools and access to investigate further. Since we don’t have those tools available on the forum side, I really appreciate your patience and understanding.

I hope this helps. If you need any further assistance, please don’t hesitate to let me know.
If my answer was even partially helpful, please kindly mark it as accepted so others with the same issue can benefit as well.
